Crispy Potato & Bacon Sheet Pan

This Crispy Potato and Bacon Sheet Pan is a simple, satisfying dish—perfect for a quick weeknight dinner or a flavorful side. Crispy potatoes paired with savory bacon are always a crowd-pleaser, and using a sheet pan keeps cleanup easy.
Ingredients:

4 medium russet potatoes, scrubbed and thinly sliced (~1/8-inch thick)

6 slices bacon, chopped into 1-inch pieces1 tbsp olive oil½ tsp salt¼ tsp black pepper2 tbsp fresh chives or parsley, chopped

Instructions:

Preheat & Prep
Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil.

Season the Potatoes
Place sliced potatoes in a large bowl. Drizzle with olive oil, season with salt and pepper, and toss until evenly coated.Assemble on Sheet Pan
Spread the seasoned potatoes in a single layer on the prepared pan. Scatter the chopped bacon evenly over the top.Bake
Bake for 30–35 minutes, tossing halfway through, until potatoes are golden and crispy and bacon is cooked.Garnish & Serve
Let the pan cool for 5 minutes, then sprinkle with chopped chives or parsley. Serve warm.
